Questions and Answers

Q. Do all the kitchens have a 'ware washer'?

A. No, only the main kitchen at Franklin Elementary and McKinley kitchen.

Q. In reviewing the Cafeteria Fund P&L for the 2018-2019 School Year, we noticed that depreciation is being charged, in the amount of $414 per month. Can you please let us know what this is for and if there is an expectation we include this is our proforma numbers? If so, what is the remaining balance?

A. The depreciation is for the truck currently provided by the FSMC. This will not apply as we will provide the truck going forward.

Q. Is all food service equipment and refrigeration/freezers in the school district owned by the School District? If not, what is the replacement plan if the district were to award this contract to another FSMC?

A. The District owns all equipment.

Q. Are all pots, pans, serving equipment and salad bars owned by the School District? If not, what is the replacement plan if the district were to award this contract to another FSMC?

A. The District owns all equipment.

Q. On the virtual tour, we noticed reusable baskets. Are these used for all student meals, at all grade levels? What are the disposable products used in the current program?

A. These are actually compostable trays. We do not use any reusable service trays, etc. as we do not have fully compliant dishwashers at each location. All containers are either recyclable or compostable.

Q. On the virtual tour you mentioned that most of the food comes from Franklin, your main kitchen. I am assuming this food is delivered by a truck. Who owns this vehicle and who is the driver employed by?

A. Currently the vendor provides the truck; however, we will provide the truck going forward. An FSMC employee would drive the truck.

Q. Can you please provide the number of employees working in the current food service program and the number of hours each employee works? Of these employees, how many employees work for the FSMC and how many work for the Burlingame School District?

A. See below. Only one employee belongs to the District.

Q. There is a reference to "snacks" on the RFP. Is this an actual Snack program?

A. No, this is actually an a la carte count, not an after school Snack program.
